Another reasons it's called "Weißbier" is that mid-19th century, some brewers in Munich replaced the dark malted barley with lighter malted wheat - or, more correctly, mixed light and dark malt, so the term weiss became a play of words (the color of Weißbier depends on the measure between barley and wheat malt). But originally, "weiss" is old-Bavarian for "wheat".

Whether or not the final fermentation process happens in the bottle or in a large tank depends solely on the brewery/ brand. Traditionally, the yeast ferments inside the bottle, which is called "Flaschengärung" in German.

I should know, since I am currently drinking one of these: http://www.steerweisse.de/ (which ranks among the best Weissbiere I have ever had). Look at the label which says "Original Flaschengärung".

Ok, now you in turn are free to lecture me on Southern gravy, and grits..... \:D

You can go with whatever you want, but your statement is still wrong. Sorry. I'm really not looking for an argument, but in this case you are mistaken.

Maybe you'll believe the Augustiner Brewery (one of the most renowned Munich breweries):

Check out their Weissbier under "assortment", and read for yourself how that product - clearly named Weissbier - ripens.

"This beer receives its easy digestibleness and its delicate spicy taste from its fermentation, up to full maturity, in bottles and its careful storage within Augustiner's own ripening vaults."

You have noticed that I actually am from Bavaria, haven't you? ;\)

Should you ever manage to come to Munich I'd be glad to arrange a visit at a local brewery for you - beer tasting included.

Speaking of Weizen....

... not for me anymore.

It happenend when I and 3 friends rented a Motor-caravan after leaving school and before going into the militar around 20 years ago. We had plenty of Weizen on board. One evening on the shore of the Garda Lake in Italy, we ended drinking MUCH of the stuff. I recall me and a buddy standing to the knees in the lake duelling ourselves with our shoes.....

Well, 20 years later, I still can`t drink Weizen. I tested several times, no go. Same for Pernod and brown Rum btw. Sins of the youth.

PS: The clear stuff on the bottom of the glass is lemonade, it's called a "Russ'n" in Bavaria.
