Despite my best efforts (with not unlimited time) I have never flown against a Fokker DVII.
Well, my 1918 56 Squadron career is getting close to the time of the DVII’s combat debut.

Got plenty of bedtime reading though and have read, right from SE5 pilots themselves, about their advice in dealing with the DVII. The actual pilots of the time period describe their tactics as what would be latter called a kind of a “Boom & Zoom.”

No turning with the DVII, no climbing, just speed on up to the DVII, get a shot off, and zip past till clear. Once clear use your speed, climb a bit, and turn and dive for another straight run. If things get too hot dive way for home.
Based on what I know of WOFF plane performances (and I know the SE5 well) this sounds like it would be good advice in-game too?
